The Story Behind Local Ferment Co: India's Clean-Label Fermentation Brewery

Local Ferment Co is a small, founder-led brewery in Bangalore with one slightly stubborn goal: to make the cleanest drinks in India. We were started in 2019 by Akash Devaraju and Noopur Porwal, and we still brew everything ourselves, in our own space, in small batches. Shrub sodas, kombucha and ginger ale, all made with real fruit and zero preservatives, all vegan, gluten-free and dairy-free.

Who started Local Ferment Co?

Two of us. Akash Devaraju (Founder and CEO) and Noopur Porwal (Co-Founder and COO) began Local Ferment Co in 2019. We brew in-house on Bannerghatta Road rather than handing production to a factory, because in fermentation the how matters every bit as much as the what. Slow fermentation is what builds the live cultures in our kombucha and the depth in our shrubs, and there is no shortcut or additive that fakes it. So when we say the drinks come from our brewery and our heart, we mean it pretty literally.

What do we actually make?

Three families of drinks, all built the clean way:

  • Soduh, our fruit shrub sodas: Imli Pop, Cherry Cola, Raspberry Rush, Passionfruit Punch and Cranberry Citrus. A proper alternative to sugary cola.
  • Kombucha, slow-fermented sparkling tea with live probiotics and real fruit: Pineapple and Basil, Pomegranate and Mint, Orange and Vanilla, Mango and Chili.
  • Ginger Ale, made with 100% real ginger juice and slow-fermented for a real kick: Classic and Kaffirlime.

What does "India's cleanest beverages" really mean?

It is a promise we can hand you the back label to check, not a slogan. Every drink uses real fruit, a natural vinegar shrub or live fermentation, and a small amount of organic cane sugar. No artificial colours, flavours or preservatives. No gluten, dairy or animal products. The ingredient lists are short and readable on purpose. Imli Pop, for instance, has seven ingredients and 80 calories per 250 ml.

We build things with people we admire

We are a brewery, but a lot of the good stuff happens alongside other independents. Our award-winning Imli Pop soda was created with Studio Sorted, the Bangalore design studio run by Abhishek Durani and Netra Ajjampur, both Forbes 30 Under 30 Asia honourees. We pour at lecture nights with Pint of View, show up for run-club mornings with the Indiranagar Run Club, and keep glasses full at community evenings with The Abstract Room. That web of collaborators is not a marketing add-on for us. It is how a small brand stays curious and stays human.
